Studies suggest that those with lactose intolerance can more easily digest milk that contains only the A2 Beta Casein milk protein. Cows carry two strains of the Beta Casein and can be A1A1, A1A2 or A2A2. Stil Dreamn Dairy tests their cows and only pasteurizes milk from the cows confirmed A2A2.

Milk from cows that graze pasture is shown to test higher in Omega 3s, Linoleic Acid, Vitamins B2, B7 and E.

Ayrshire milk naturally has a sweeter taste than the other breeds and their fat globules produced in the milk are the smallest of all dairy cattle. The smaller fat globules are shown to be more digestible and are ideal for cheese making. Ayrshire milk is also higher in Butterfat and Protein content than Holsteins.

Guernsey milk is known for its thick, creamy texture and is amongst the highest in Butterfat and Protein content for all dairy breeds. Guernsey milk is famous for its naturally Golden color. This color derives from the Beta Carotene in the milk. Guernsey milk naturally contains more Beta Carotene than all the other dairy breeds.

Fluid milk produced will feature Cream-line products. Also known as “non-homogenized.” Non-homogenized milk is shown to be easier to digest than homogenized milk and contains more vitamins, fat and protein content. Cream-line products can be shaken to enjoy or skimmed to utilize the cream separately.
