Our milk is “Just as it comes from the cow!” Whole and non-homogenized. Our milk will settle and produce a natural cream line. This cream can be shaken back into the milk or skimmed off to utilize as cream.

Vat Pasteurized, also known as batch pasteurized. Heating the milk longer at a lower temperature than “Ultra pasteurized” helps retain a high percentage of the milk’s natural enzymes, beneficial bacteria, health benefits and flavor.

With less processing the butterfat content can vary throughout the year, just as it does from the cow. Cows’ Butterfat content naturally varies depending on their stage of lactation, feed intake and genetics. Our whole milk should average around 4.2% Butterfat for the year (the standard to be called “whole” is 3.25%.)
